Strawberry Jam recipe

Strawberry Jam


500g strawberries cleaned and halved
500g jam sugar (I used TATE LYLE jam sugar)
Juice of one lemon (you can use half lemon but I like tanginess that the lemon gives to the jam)

Put the strawberries and the lemon in a heavy and large saucepan and heat for a few minutes until the strawberries are soft.
  Add the sugar and let it simmer for about six minutes. Do the sugar setting test using a cold plate and a spoon. If the jam wrinkles when you use your finger to press the surface then the jam is ready. Take off the stove and let it rest for about 15 minutes

A film forms on top of the jam so using a slotted spoon, remove the film before putting into sterilised jars.

 Put in a sterilised jar and leave it to rest until set then ENJOY a slice of homemade brown bread or homemade scones.
